This year’s winter release evokes the warmth of a Tasmanian winter breakfast — fluffy pancakes drizzled with maple syrup, paired with golden banana fritters, lightly crisped and smothered in velvety dark chocolate sauce.

Inspired by last year’s winter release, this expression began in a rum and maple cask matured for six and a half years. It was then married with whisky from a rich tawny cask and a banana brandy cask for a fresh twist, before finishing in a vintage 40 year old tawny for depth and balance.

Rum and maple intertwine seamlessly with tawny richness, while the banana brandy adds a subtle, unexpected thread—bringing it all together in a decadent, dessert-like whisky with layers of warmth and complexity.

Nose
Salted caramel and Medjool dates lead, with vanilla, roasted coffee, and a lift of ripe tropical fruit. A gentle thread of oak spice lingers in the background.

Palate
Velvety and full. Toffee and orange syrup melt across the palate, setting the stage for crème brûlée, baked fig, and a wave of burnt caramel. Sweet rummy fruit and warming oak bring brightness and balance before the finish unfolds.

Finish
Bright citrus peaks mid-palate before easing into candied ginger, sticky pudding, and soft dark chocolate. The finish lingers long and smooth, flickering between sweet and savoury, with a gentle toasted edge.
