Hillrock - American Rye Finish
Bold, spicy, and structured.

Style: Small-batch whisky finished in American rye casks.
Age: A blend of 5- and 6-year-old whisky.
Cask Journey: Aged in American bourbon barrels. Finished for 18 months in American rye casks.

This particular barrel was first used in a process known as double cask aging.

This whisky brings the sweetness of bourbon casks, with notes of vanilla, toffee, citrus, and roasted nuts. The rye influence creates a balanced spice that gives a gentle tingle through the middle of the palate, with hints of cracked pepper, nutmeg, and cinnamon. It’s layered, lively, and finishes fresh and toasty.

Tasting Notes

Nose: Toasted brown bread and marmalade, with vanilla and citrus lifting through. Nougat and warm toffee add sweetness, underpinned by a gentle spice.

Palate: Opens with toffee apple, panna cotta and creamy nougat. Through the middle, there’s a touch of milk chocolate and roasted nuts, adding richness and weight. A subtle hint of caramelised tropical fruit brings some brightness. Cracked pepper, cinnamon, and nutmeg build through the mid-palate, adding structure and warmth. The extended rye finish brings a gentle grip.

Finish: Long and nostalgic — nougat, soft spice, rainbow ice cream, and a toasty, drying fade.
