Our first limited release for 2025 — and, as always, we’ve done things a little differently.
Introducing the States of Influence Trio:
Three whiskies. Released over three months. Three distinct spirits, each influenced by a different American state.
25-001 – New York (July Release)
Our American Rye whisky — also our house spirit — sits right in the middle of the flavour spectrum. With a medium body and mouthfeel, it’s approachable, balanced, and checks all the boxes as a versatile all-rounder.
25-002 – Kansas (August Release)
Our first-ever triple-distilled release. Drawn from a 38-litre Dark Horse cask, this expression is lighter, exceptionally clean, and bursting with flavour. A refined take on American influence, with a Tasmanian twist.
25-003 – Tennessee (November Release)
The final in the trio — and the boldest. Made from wide-cut newmake spirit, this cask strength whisky fully coats the palate, with a broad, oily mouthfeel and a long, powerful finish. Initially matured in 50L resized Jack Daniel’s barrels (medium toast, medium char from Transwood Cooperage) for three years, then transferred to a fresh 200L JD cask for two more. Not for the feint-hearted — this one’s BIG.

Hillrock - American Rye Finish
Bold, spicy, and structured.
Style: Small-batch whisky finished in American rye casks.
Age: A blend of 5- and 6-year-old whisky.
Cask Journey: Aged in American bourbon barrels. Finished for 18 months in American rye casks.
This particular barrel was first used in a process known as double cask aging.
This whisky brings the sweetness of bourbon casks, with notes of vanilla, toffee, citrus, and roasted nuts. The rye influence creates a balanced spice that gives a gentle tingle through the middle of the palate, with hints of cracked pepper, nutmeg, and cinnamon. It’s layered, lively, and finishes fresh and toasty.

Dark Horse Cask - Bourbon Matured
Elegant and smooth, a light spirit with full flavour.
Our first-ever triple-distilled release. Drawn from a 38-litre Dark Horse cask, this expression is lighter, exceptionally clean, and bursting with flavour.
A refined take on American influence, with a Tasmanian twist.
Style: Triple Distilled release : (Dark Horse Cask) elegant and smooth a light spirit with full flavour (bourbon bomb).
Age: 4 years
Cask Journey: A 38 litre cask matured for 4 years.
Bourbon is traditionally aged in new, charred American oak barrels.
The charring process caramelizes the wood's natural sugars, imparting flavours like vanilla, caramel, and spice to the whisky. Temperature and humidity, significantly influences the aging process. Kansas's climate can impact how the bourbon interacts with the cask, affecting the flavour development over time

Tennessee

Jack Daniel’s Cask - Cask Strength Tennessee Whisky
Intense oily and full-bodied.
Style: Small-batch whisky matured in ex Tennessee casks, with wider cuts taken during distillation to give a fuller mouthfeel.
Age: 5 Years.
Cask Journey: This whisky was matured for 3 years in 50L resized ex Jack Daniel’s barrels (medium toast / medium char from Transwood Cooperage). We then dropped it into a freshly emptied Jack Daniels cask to give it more intense sweetness, and left it there for a further 2 years.
Big, bold and unapologetically fun — this is the most intense expression in the States of Influence Trio. We pushed the flavour on this one, chasing weight, sweetness and impact. Think candy shop brightness with real depth behind it — this is Tennessee influence done the Hobart way.
