Chardonnay Cask Finish

56.4% abv.
Matured in Bourbon barrels and finished for six months in Chardonnay cask, this unique expression embraces the delicate notes of white grapes, interwoven with the rich backbone of bourbon. To harmonise the palate and balance the Chardonnay's acidity, we've given it an additional finish in a Rum cask for a month, introducing a touch of sweetness and tropical warmth.

Tasmanian Botrytis Cask

American oak ex-Bourbon Matured, Tasmanian Botrytis cask finish.
This whisky has undergone a unique maturation process that has resulted in an unparalleled flavour profile. Initial maturation for three years in American oak ex-bourbon cask, imparting a rich foundation of sweetness and character. Next, it spent two and a half years in a Tasmanian Botrytis cask, infusing it with intriguing floral notes and the delicate essence of Riesling tropical fruit.
To enhance complexity, depth and assist with structure and balance, we transferred it back to an American oak ex-bourbon cask for an additional six months, allowing the flavours to harmonise and reach their full potential.
