Matured in Hillrock Distillery, Maker’s Mark and Dark Horse ex-bourbon casks for 5 years, vatted and finished in a pair of Laphroaig Quarter casks for around 4 months.
Light peat, full of malty caramel sweetness, some light floral notes, light rye influenced spice. Lingering Islay peat notes tie it all together and leave it with a long and satisfying finish.

Bourbon Matured / Rum Finished

A vatting of American oak, ex-bourbon cask matured whisky, 3 years of age, before being moved into a rum cask where it remained for 2 years. Finally this whisky was recasked into multiple fresh, small format rum casks adding additional layers of rum and complexity.
Cut to 56.4%, this is an approachable, light drinking whisky perfect for the summer ahead.
Distinct bourbon and rum notes on the nose. Toffee, tropical fruit, candied pineapple, sweet biscuit and vanilla.
The palate is dominated by rich tropical fruit, slightly savoury, bbq’d pineapple with brown sugar. Lingering caramel and toffee notes with light orchard fruit.
A long, sweet, syrup-like finish.
Christmas 2021 Limited Release: Barrel aged Cherry Liqueur Cask Finish

Something unique in the spirit of Christmas, Hobart Whisky Barrel Aged Tasmanian Cherry Liqueur, and Single Malt whisky finished in the very same cask.
The whisky started with a vatting of carefully selected casks suitable to finish, predominantly ex-Bourbon with a small portion of Pedro Ximinez. It was important to ensure we found mature stock that provided a nice balance of spirit and wood, complementing the sweetness provided by the cherry liqueur cask. Finished for three months, then resting, before being bottled in time for a festive season release.
This is a rich and sweet whisky, perfect alongside your Christmas feast, or a quiet dram to see out 2021.
A sweet fruit-driven nose with red apple, icing sugar dusted cherries, and candied lollies.
The palate is thick, with notes of fresh raspberry lemonade, berry compote, maraschino cherries, and toffee apple. Sweet vanilla custard and honeycomb follow the initial fruit notes, with a subtle, fresh, rustic orchard element.
A drawn out finish with dark fruit, black forest cake, and gentle spice.
Tawny Port Cask Matured

Matured in a pair of 100L Tawny Port casks for three years before being transferred and finished for just under two years in a fresh 225L Tawny Port cask.
Expressed at 51.1%, this is a big, bold and rich, Tawny port cask whisky.
A nose dominated by stewed fruit and burnt sugar, with a mild citrus spice.
On the palate, toasted oak, dark fruit, and prominent fortified influence work in harmony with the tannins. Orange marmalade and fresh malt, a tantalising tartness, with hints of dark chocolate and dates.
A mild sweetness in the finish is complimented with a bitter orange, developing and lingering as a slight dryness, inviting yet another sip.
Beer Cask Series: Smoky Rye Red Ale Cask

Matured in a American oak ex-bourbon cask for three and a half years before finishing in a 20L ex-Pedro Ximénez sherry cask that has been barrel-aging a Smoky Rye Red Ale, brewed by our own head distiller, Ben James.
Nose: Marmalade and baked pastries, red berries, vanilla, cinnamon and wafts of sweet malty smoke.
Palate: The rich marmalade presents alongside a malt backbone. Baked cereals and brandy snaps with custard, fill the mid palate with savoury charred honey notes.
Finish: The sweet and savoury elements subside to leave honeycomb and pantry spices to linger.
Beer Cask Series: Imperial Stout Cask

Matured in a 40L American oak ex-bourbon cask for four years before finishing in another 40L American oak ex-bourbon cask that has been barrel-aging a stout, brewed by our own head distiller, Ben James. This particular finishing cask was used to serve our 2019 Winter Feast release from during the event.
Nose: Rich fruit and nut dark chocolate, latte coffee complemented with light leather and pipe tobacco notes. A mild citrus, similar to lemon sherbet lollies.
Palate: The initial rum cask maturation permeates with notes of salted caramel, and pecans. These are integrated with notes of black coffee, dark brown sugar, and chocolate. Followed up with chocolate waffles with maple syrup and candied citrus.
Finish: A medium to long finish with biscuit crumb, roasted grains, cacao nibs and a gentle spice.
Beer Cask Series: Ginger Beer Cask

This whisky has been matured in a 40L American oak ex-bourbon cask for three and a half years before finishing for ten months in an 40L cask that has been filled with a ginger beer brewed by our own head distiller, Ben James.
A sweet nose of honeycomb, buttered ginger cake, and fresh lime syrup. Biscuits and more fresh citrus and ginger on the palate. Medium to long finish, sweet with oak and gentle spice.
Nose: Marmalade and honeycomb complemented with lime syrup and buttered ginger cake.
Palate: A silky palate, think custard and cinnamon drizzled in golden syrup. Followed by bursts of fresh ginger, citrus fruits and ginger bread biscuits. Underlying notes of toffee, and malted vanilla milkshake. A unique whisky which showcases its initial bourbon cask maturation on the palate. Hints of rum and plenty of ginger flavours with a mild, balanced spice kick.
Finish: A medium to long finish with a continuing sweetness accompanied with oak, cinnamon, and a gentle ginger and citrus spice.
Beer Cask Series: Porter Beer Cask

This whisky has been matured in 40L American oak ex-bourbon casks for three and a half years before finishing for ten months in an 80L cask that has been filled with a Porter beer brewed by our own head distiller, Ben James.
A whisky that is sweet, with plenty of roasted grains. Stewed fruits, rich chocolate and burnt toffee on the palate and a medium, sweet nutty finish.
Nose: Consumed by notes of stewed fruit, fresh date fruit, and juicy peach. Complemented with chocolate, nuts and sweet honeycomb, it could almost be confused as a fruit and nut chocolate. Lingering notes of roasted grains, and coffee.
Palate: Rich toasted and charred oak undertones, vanilla, chocolate mousse, paired with a latte coffee. These notes are extended by roasted cacao beans, toffee, and liquorice, with just a hint of honeycomb.
Finish: Medium and rounded presenting more chocolate along with butterscotch, marmalade on dark rye toast, dandelion tea, light nuttiness, pepper and after dinner mint.
2020
Sherry / Bourbon Cask Marriage

A marriage of ex-Oloroso, Pedro Ximinez, Apera Sherry and Bourbon casks, expressed at 49.3%.
A balance of the various sherry casks complimented with the sweet notes of the bourbon and a very subtle smoke through the addition of a small amount of peated cask.
On the nose, raspberry bush with a gentle smokiness and hints of cranberry, brandy snaps, and fruit mince pies. Followed by Christmas pudding, toffee apples, leather, and subtle honeycomb.
The palate has rich sherry with light smoke, fruitcake and strawberry jam on buttered toast. Toasted nuts, cherries, turkish delight, salted caramel macarons, and biscuit crumb. Trifle with vanilla bean custard and red jelly.
A medium length finish with balanced warmth, hints of roasted coffee, and smokey dark chocolate.
Laphroaig Cask Finished

Matured in small ex-bourbon casks for 3.5 years, transferred to a 200L rum cask for 1 year then finished in a 200L Laphroaig cask for only 12 days.
Mellow peat, full of malty caramel sweetness, high floral notes, and rum goodness coming through. Lingering Islay peat notes tie it all together and leave it with a long and satisfying finish.
Nose: Rich rum notes peek through the sweet floral bourbon overtones with a welcome whiff of earthy peat.
Palate: Clean malty alcohol provides the big opening, then the floral and peat notes dance across the palate with suggestions of boiled lollies, vanilla beans and musk sticks recalling the bourbon cask origins. The diverse elements resolve into a delicious complexity that lingers long and rich.
Finish: It is here that the Islay peat comes to the fore and carries all the elements of this complicated dram to a wonderfully fulfilling conclusion. A little water adds a creamy element but does diminish the glorious rum sweetness so do enjoy this engaging dram at cask strength before reaching for the water jug.
2019
Hungarian Oak Tokaji Cask

Matured in a recoopered Hungarian Oak Tokaji cask. A light and floral whisky expressed at 49.8% abv.
This release is bottled intentionally unflocked and unfiltered. This leaves all of the naturally occurring oils present in the whisky which adds to the texture and flavour.
Nose: Fresh peaches and nectarines with hints of almonds and orange marmalade. Clean and distinct alcohol plus some oaky dryness.
Palate: Thick and viscous with a restrained sweetness which then opens onto the mid palate with a crescendo of warm alcohol, dry tannins, lifted florals, and peppery high notes that linger in a tantalising mixture of pantry spices.
Finish: Long and eventually dry with the persistence of the oak tannins and alluring spices.
Last Rites Brewing Co collaboration Stout Cask

A marriage of small American Oak Ex-Bourbon matured whisky finished in a Stout project cask from Last Rites Brewing Co.
Small American Oak Ex-Bourbon mature whisky that was carefully selected and finished in a cask that was used by local brewery, Last Rites, to barrel age a stout.
Nose: Toasted oatmeal and sweet malt with hints of citrus.
Palate: Lovely oily viscosity, marzipan and candied orange peel with well integrated alcohol. A little water promotes the sweetness and highlights the malty notes.
Finish: Soft tingly alcohol lingers as the sweetness gives way to a pleasantly dry finish.
French Oak Port Finished

A marriage of small American Oak Ex-Bourbon matured casks finished in French Oak Port expressed at 48.6% abv.
Nose: Sweet malt and vanilla caramel over hints of dark fruit lingering beneath.
Palate: Opens sweet and creamy then builds across the palate to warm toffee pudding with the alcohol coming in late and clean. A gentle peppery chorus is there in the background to complete the picture. Complexity and subtle elegance are the keynotes.
Finish: A long and satisfying warm finish with lingering vanilla bean and some faint floral notes over some subtle peppery zing.
Small Ex-Bourbon Cask

Nose: Soft and inviting, with creamy vanilla, juicy fruits, baked streusel cake. Toffee apples and a gentle maritime note.
Palate: Shortbreads, apricot jam, gingerbread and white chocolate. Fresh fruits, butterscotch, apple pie and white oak.
Finish: Smooth, creamy and well textured, with juicy fruits, vanilla slice and a burst of citrus. A touch of milk chocolate, oak, and a hint of peach.
French Oak Pinot Noir Finished

Nose: Heavily charred American oak, stewed fruits & chocolate fudge. Followed by caramelised brown sugar, vanilla bean & ripe mango.
Palate: Creamy vanilla, butterscotch and a burst of tropical fruits greet the palate. With papaya, kiwi fruit, melons and candied orange peel all making an appearance.
Finish: Sweet plum, citrus, fermented grapes and cocoa nibs carry long into the finish. With stewed apples, brandy custard and some white oak spice.
Small Ex-American Whiskey Cask

Hobart Whisky Third Release, a marriage of selected small Ex-Lightly Smoked American Whiskey casks from Hillrock Distillery, expressed at 50.3% abv.
Nose: Enticing caramelised brown sugar combined with virgin sugar cane balanced with notes of milk chocolate, peanut brittle and pecan pie. Sugar crusted shortbread bound with Christmas candy cane followed by hints of rye spice and light smoke.
Palate: A soft and creamy mouth feel with alluring red toffee apple, and summer orchard notes. Ginger, vanilla, caramel and biscuits consume the front palate with subtle nutmeg impressions. Nougat, Anzac biscuits and apple pie round out the palate with subtle notes of stone fruit, followed by softened chocolate.
Finish: A short yet delicate finish with flourishing citrus notes with hints of iced gingerbread, roasted peanuts and cotton candy. The light smoke comes through with notes of oak char, and a waft of smoke.

Nose: An alluring essence of candied orange peel, stewed fruit, freshly ground nutmeg, and a hint of milk chocolate. Polished leather and raisin gives way to ginger and a splash of lime.
Palate: A creamy mouth feel with sweet and rich fruits. Think PX meets Port. White Oak spices lend a touch of honey, shortbread, and vanilla custard. A faint hint of cranberry, apple pie, and Moscatel grapes.
Finish: Persistent and intriguing, with lingering notes of butterscotch, sultana, tobacco leaf and rhubarb. An eloquent display of fruits and spices, welcomes you back for more.
American Oak Ex-Bourbon

Nose: Enticing honeycomb and vanilla fudge wrapped in a hint of sweet beeswax. Light and fresh with the promise of violet crumble.
Palate: Lovely, creamy and mouth-filling soft, sweet spirit with a solid base of clean malt underpinning the vanilla crème brulee notes that shout ‘well made bourbon cask single malt’. A pleasantly light, beguiling and eventually deeply satisfying dram.
Finish: Medium to long with lingering toffee notes and enough white oak tannins to guard against any cloying effect. An entirely satisfying conclusion that invites another visit.
