We're excited to introduce our Winter Feast 2024 Limited Release Whisky! As winter sets in, we've crafted something special for you to enjoy—a whisky that truly captures the magic of the season. This year's release carries on our tradition of maple cask maturation, a beloved theme since our first Winter Feast in 2019.

This whisky has been aged for five and a half years in a Bourbon Maple cask, then combined with an ex-Islay whisky cask, and finished off in a vintage Tawny cask for that extra depth. This process gives it a rich profile with sweet maple notes and savoury smoky undertones. We've also added a touch of rum cask to bring even more sophistication to the blend.
From the first sip, you'll notice an inviting mix of dried fruits and rich toffee. On the palate, you'll find layers of dark chocolate, ripe plums, and a hint of cinnamon that create a warm, cosy feeling. The vintage Tawny cask adds complexity with hints of dried fruits, warming spice, and rich chocolate. The finish is long and elegant, with gentle oak and a delicate sweetness that lingers.

Smoky Bacon Maple Syrup Cask
We’ve taken this year's release to an all new level!
Continuing with our maple theme from previous Winter Feasts, a finishing cask was left in the Boks Bacon smokehouse for a week where it was infused with sweet bacon smoke.
We filled this cask with natural maple syrup producing a barrel-aged maple syrup before finishing ex-bourbon mature single malt whisky for several months producing a smoky bacon maple syrup seasoned cask finished whisky.
Expressed at 55% abv.
Purchase the whisky, or add on a 200ml bottle of the maple syrup from the cask.
Due to the limited supply of maple syrup at this point we are unable to offer it separate to the whisky until we can confirm that everyone who has purchased a bottle of whisky has at least had the opportunity to grab the maple syrup as well.

Winter Feast 2021 / Maple Stout Cask

Matured for over
four years in 40L and 80L American oak ex-bourbon and ex-rum casks,
before finishing in a cask that we have been using to barrel-age our own
Maple Stout for the 2021 Winter Feast.
The combination of
ex-bourbon, ex-rum and maple stout cask influence bring sweetness and a
range of complex characteristics into the mix, changing in the glass as
it breathes.
The nose is tropical fruit, creamy toffee, and cigar box wood.
The palate is thick, big and bold with waves of vanilla, pineapple, and
pantry spice. Accompanied by sweet and rich maple syrup and burnt
caramel. The roasted grains enhance the flavour with notes of dark brown
sugar, chocolate and buttermilk pancakes.
The combination of
ex-bourbon, ex-rum and maple stout cask influence bring a lot of complex
characteristics into the mix, changing in the glass as it breathes.
A
lingering mouth-filling finish with notes of biscuit crumb, roasted
grains, more maple syrup sweetness and a mild tobacco spice.

Winter Feast 2020 / Bourbon Maple Cask

Despite the
cancellation of DARK MOFO due to COVID-19 we want to share a small part
of what would have been our contribution to the 2020 Winter Feast.
This
limited release single malt whisky has spent 3-years in small American
oak ex-bourbon casks, before being transferred to finish for 18 months
in a 200L ex-bourbon cask used to mature maple syrup.
Nose: Sweet
biscuit crumb and slightly burnt marshmallows, creamy vanilla, juicy
fruits, baked apple streusel cake, toffee, ginger, chicory and light
pantry spice.
Palate: A bold opening of sweet toffee and warm
butterscotch balanced with mature oak, a touch of leather and spice.
Rich caramel and buttermilk pancakes, vanilla ice cream and maple syrup
with passion fruit candy.
A harmony of sweetness and spice across the palate with subtle oak.
Finish:
A lingering and satisfying finish with alternating peaks of sweet
spices and peppery delights met with celery and cacao nibs.

2019 Winter Feast / Rum Maple Cask
This single malt has had a 3-year maturation period in small 40L
American oak ex-bourbon casks, before being transferred to finish in a
cask that previously held Guatemala rum, and more recently cask-matured
maple syrup.
Nose: Sweet with fresh celery hints, coffee beans and tobacco, Jamaica pepper, spicy and invitingly complex.
Palate:
A big, bold and yummy/rummy opening with fabulous pantry spice and
maple syrup flashes. Like a full Canadian breakfast of buttermilk
pancakes with smoky bacon and warm maple syrup. A genuine mouth-filler
with sweet spiky spices dancing across the palate.
Finish: Long
and amazingly satisfying with alternating flashes of sweet, spicy and
peppery delights. A glorious winter warmer and perfect for Dark Mofo
revellers!
